Guess what? Maggie and I actually got to walk together recently! Our family gathered in Chicago to celebrate our grandmother’s 90th birthday. She’s an amazing lady, and it was so wonderful to celebrate with her. Here’s an outline for our in-person (!) conversation:
This mushrooms and greens with toast recipe is so up my alley. I love simple food that requires washing only one pan.
One thing I never thought about before having kids is how often you have to feed them. I mean, they expect me to feed them three times a day. Every. Single. Day. And with some snacks thrown in for good measure. It’s a little overwhelming at times. And then summer comes. No more school lunches to pack— that in itself is cause for celebration. And I like to give myself a break from cooking dinner too. We tend to be out and about more in the afternoons, and I don’t like to rush home so that I can cook dinner. So, I focus on more simple meals. We might grill some extra chicken one night, and then throw it onto a rice bowl or into a salad. A turkey sandwich becomes a perfectly acceptable dinner. It’s a much needed break, and makes me excited to start cooking my favorite dishes come fall.
Speaking of feeding kids, I am trying to get mine away from eating their weight in cereal every morning. I am not a cereal person, and I’m a little disturbed by the volume of cereal consumed in my house. Maybe I can convince them to switch out their cereal for breakfast cookies? I’m going to try making Maggie’s everything cookies or Jess’s blueberry breakfast cookies. My pitch for avocado toast this morning was a complete flop.
I hate to admit this, but my alarm is typically a short blonde gremlin yelling very loudly around 5:45 a.m. I aspire to be one of those people that gets up before I absolutely have to, and take some time for myself in the morning, rather than just running around like a crazy person. According to people that do this, there are many benefits to getting up early. It’s an aspiration, not my reality. Maybe I’ll start next week?
One of the things I want to do during those early morning hours is this 7-minute workout. Seven minutes to strength and good health? Count me in. At least, count me in once I can start setting my alarm.
